Ingredients


For the bowl
    ●    150 g chicken breast
    ●    180 g potatoes, cut into wedges
    ●    1 avocado
    ●    Handful of fresh spinach
    ●    5 cherry tomatoes, halved


For the tzatziki
    ●    50 g low-fat Greek yogurt
    ●    ¼ cucumber, grated
    ●    1 garlic clove, crushed
    ●    Salt & black pepper, to taste
Seasoning
    ●    Salt
    ●    Black pepper

Method
    1.    Bring a pot of salted water to the boil and cook the potato wedges for 5 minutes. Drain well.
    2.    Place the wedges into the air fryer and cook at 200°C for 10–15 minutes, or until golden and crispy.
    3.    Season the chicken breast with salt and black pepper. Grill or pan-fry for 5–6 minutes per side, until cooked through. Slice into strips.
    4.    To make the tzatziki, combine the Greek yogurt, grated cucumber, crushed garlic, salt and black pepper.
    5.    Assemble your bowl by adding the crispy wedges, grilled chicken, fresh spinach, cherry tomatoes and sliced avocado.
    6.    Finish with a generous spoonful of homemade tzatziki and enjoy.
