Ingredients
For the filling:
• 120g pitted dates
• 60g ground almonds
• 40g walnuts
• 30g pumpkin seeds
• 40g vanilla protein powder (whey or plant-based)
• 1 tbsp honey (15g)
• 2–3 tbsp warm water (as needed for texture)
For coating:
• 120g dark chocolate (70% cocoa)

Method
1. Blend dates until sticky.
2. Add almonds, walnuts, pumpkin seeds and protein powder.
3. Blend until combined.
4. Add honey + 1 tbsp warm water at a time until mixture sticks together.
5. Roll into 10 equal balls.
6. Dip in melted dark chocolate.
7. Refrigerate 30 minutes until set.
